Instructions

In a blender or heat-proof shaker, combine all ingredients.

  1/4cup Rainforest Herbs organic coconut flour
  2tbsp Rainforest Herbs organic coconut oil plus a little bit
  extra for greasing mini waffle maker
  3 eggs
  6tbsp whipping cream
  1/2tsp baking powder
  1/8tsp Himalayan salt
 
Others
300g beef stir-fry stripsseasoned with salt and pepper
Rainforest Herbs organic coconut oilfor stir-frying
3pieces cheddar slices
Fresh herbs of choice
 
Instructions
A. Coconut Flour Waffles
  1. In a blender, add coconut flour, coconut oil, eggs, whipping cream, baking powder, and salt. Blend until smooth batter forms.
  2. Grease mini waffle maker with coconut oil.
  3. Once hot, add waffle batter. Let cook for 3 minutes
  4. Remove cooked waffle from maker. Repeat until out of batter.
  1. Stir-Fried Beef
  1.     In a pan, heat coconut oil.
  2.     Add beef strips. Stir fry until cooked, and remove from pan.
  1. Assembly
  1.     Start with a layer of coconut flour waffle.
  2.     Top with cheddar slice.
  3.     Top with stir-fried beef.
  4.     Sprinkle fresh herbs, and top with coconut flour waffle.
  5.     Optional step: Warm the waffle sandwich in the oven for a few minutes to melt the cheese.

Ingredients

A. Creamy Kerisik Sauce 

  1.     2tbsp Rainforest Herbs coconut butter
  2.     2tbsp unsalted butter
  3.     1tbsp minced garlic
  4.     2tbsp whipping cream
  5.     1tsp lemon juice
  6.     Himalayan salt
  7. Others
  1.     2pieces boneless skin-on chicken chops seasoned with salt and pepper
  2.     Rainforest Herbs organic coconut oilfor pan-frying
  3.     fresh herbs of choice


Instructions

  1.     In a pan, heat oil.
  2.     Add chicken chop and pan-fry until cooked.
  3.     To make the kerisik, add coconut butter to a pan on low heat.
  4.     Stir and let cook until browned and fragrant. Remove from pan.
  5.     To make the creamy kerisik sauce, add butter to pan on low heat.
  6.     Once melted, add garlic and saute.
  7.     Add kerisik, whipping cream, lemon juice, and salt. Mix until well-combined.
  8.     Add water to desired consistency.
  9.     Transfer to blender and blend until smooth.
  10.     To serve, top chicken chop with kerisik sauce. Sprinkle with fresh herbs.
